Quinoa Taboule

I am a big fan of quinoa… you can prepare it so many ways. I can easily  have it for breakfastlunch or dinner! I have wanted to try this recipe for Quinoa Taboule and I finally made it last weekend. I didn’t have all the correct ingredients on hand, so I did a bit of substituting. It turned out quite delicious. It’s so fresh! Taboule is also a versatile dish. It’s great alone as a side-salad, with pita bread or chips, on a sandwich….the possibilities are endless.

Quinoa Taboule

INGREDIENTS

  • 2 Cups cooked and cooled Quinoa
  • 1 Cup chopped Parsley
  • 1/2 Cup chopped Scallions
  • 2 Tbsp. chopped fresh Mint
  • 1 Tbsp minced fresh Basil
  • 1 Garlic Clove, minced or pressed
  • 1/2 Cup fresh Lemon Juice
  • 1/4 Cup Extra Virgin Olive Oil
  • 1/4 tsp. Salt
  • 1/8 tsp. freshly ground White Pepper

Toss together all ingredients. Chill for 1 hour or more to allow the flavors to blend. Makes 6 servings.

Yes, it’s those special moments in life we cherish. I have many memories fishing with my grandpa growing up. He’d pick me up early and have a packed breakfast of burnt pancakes rolled with jam. It was the best. Last July I returned to the lake for one last fishing trip. It was special to say the least. We didn’t catch many fish, but the company and conversation was all I was looking for.

The solitude of peaceful mornings on the lake… that was my grandfather’s playground.
